Sree Nandhaas is a chips, snacks and sweets house from Thiruvananthapuram, the seat of old Travancore. The recipes started in the 1930s with our grandmother, passed to her children and then to us, and we still follow them to the dot — Nendran sliced thick and fried whole, murukku with a proper snap, sharkara varatti turned in jaggery. Made fresh in our own kitchen, packed carefully enough to travel anywhere in India.
One counter, a short list worth making properly, and a family that already knew how. The recipes were the ones already in the house.
More counters followed across Thiruvananthapuram and the range widened, but the method did not. The people at our counters pack what leaves them.
